Ingredients
| 150 g | pasta, such as fusilli |
| 125 g | cherry tomatoes, halved |
| 1/2 | cucumber, diced |
| 100 g | feta, crumbled |
| 1/2 | red onion, finely chopped |
| 10 | black olives |
| a handful | rocket (add in the morning) |
| 2 tbsp | olive oil |
| 1 tbsp | red wine vinegar |
| 1 tsp | dried oregano |
| to taste | salt and pepper |
Method
- Cook the pasta, rinse it with cold water and let it drain well.
- Whisk the olive oil, vinegar, oregano, salt and pepper together.
- Mix the pasta with the tomatoes, cucumber, onion, olives and dressing.
- Crumble the feta over the top.
- Put it in the container, close the lid and keep it in the fridge. Add the rocket in the morning.
Pasta salad is the easiest lunch to make ahead. It tastes better the next day, it is fine cold, and one batch covers two lunches.
This one fits in our 1200 ml round container: deep enough for two portions, and the round shape makes it easy to stir the dressing through before you eat.
Keep the rocket separate
Everything else can go in the evening before. Rocket wilts in dressing, so put it on top in the morning, or leave it out.
What steel does not do
It keeps nothing cold. On a warm day, or when lunch sits in a bag for hours, put a cold pack next to it. Carry it upright: the lid is leak-resistant, and oil on its side is a gamble.
Food should be stored without doubt.
Good to know
- Keeps two days in the fridge.
- Add rocket in the morning: it wilts in dressing.
- Not insulated: use a cold pack on warm days.
- Carry it upright: the lid is leak-resistant, not leak-proof.
