Ingredients

75 g rice (dry weight)
100 g cooked chicken breast, sliced
75 g edamame (frozen, thawed)
1/2 cucumber
1 carrot
1 spring onion
1/2 avocado (add in the morning)
1 tsp sesame seeds
1 tbsp soy sauce
1 tsp sesame oil
1 tsp rice vinegar
1 tsp honey

Method

  1. Cook the rice, spread it out so it cools quickly, and put it in the fridge within two hours.
  2. Stir the soy sauce, sesame oil, rice vinegar and honey together, and mix it through the cold rice.
  3. Put the rice on one side of the divider.
  4. Cut the cucumber and carrot into thin strips and slice the spring onion.
  5. Put the vegetables, edamame and chicken on the other side. Sprinkle with sesame seeds.
  6. Close the lid and put it in the fridge overnight. Add the avocado in the morning.

Most workplace lunches fail on the microwave: a queue, a smell, a container that comes out warped. This one skips all of it. A rice bowl is meant to be eaten cold.

It fits in our 1400 ml lunch box. Rice with the dressing on one side of the divider, the vegetables and chicken on the other, so nothing goes soft before lunchtime.

Make it the night before

Mix the dressing through the rice in the evening. The rice takes it up overnight and tastes better for it. Add the avocado in the morning, or it turns brown.

Without meat

Replace the chicken with 100 g of tofu or an extra handful of edamame.

What steel does not do

It keeps nothing cold on its own. If your lunch sits in a warm bag until one o'clock, put a cold pack next to it. And carry it upright: the lid is leak-resistant, and dressing on its side in a bag is a gamble.

Food should be stored without doubt.

Good to know

  • Made to be eaten cold.
  • Cool the rice quickly and eat it the next day.
  • Add the avocado in the morning.
  • Use a cold pack if your lunch sits in a warm bag.
  • Carry it upright: the lid is leak-resistant, not leak-proof.
