Hosting With Steel Containers: Prep Ahead, Carry, and Deal With the Leftovers

Hosting is mostly logistics. The food is the easy part; the hard part is that six things need to be ready at once, and four of them were made yesterday.

Steel containers are good at some of that and useless at the rest. Here's which is which.

What they're good for: the day before

Most of hosting happens before anyone arrives. Sauces, dressings, marinades, chopped things, the components that get assembled at the last minute. All of it sits in the fridge overnight.

Steel handles that well. It doesn't hold the smell of last week's garlic, it doesn't stain from beetroot or tomato, and it doesn't go cloudy and soft the way a plastic tub does after a year of the same job. Stack them, and the fridge holds more than it looks like it should.

On acidic things — the tomato sauce, the vinaigrette — steel is fine for normal fridge storage. We've written the long version of that, including the part where we admit nobody seems to have studied it properly.

What they're good for: getting there

If you're the one bringing the dish, this is the whole problem. A container with a steel lid and one silicone seal closes properly, and it closes properly on the two-hundredth time as well as the first. That's the difference between arriving with a salad and arriving with a bag that needs explaining.

Our rectangular containers stack flat in a bag. The round ones are better for anything wet.

What they're not good for: keeping anything warm

We should be plain about this. Our containers are not insulated. Single-wall steel, no vacuum. Put a hot dish in one and it will be at room temperature about as fast as anything else — arguably faster.

If you need food hot at 8pm that was cooked at 6pm, you need an oven, a hotplate, or a vacuum-insulated container, and we don't sell any of the three. Anyone telling you a plain steel box holds heat for four hours is selling you something.

What they're not good for: the table, always

A steel container is opaque. You can't see what's in it, which is a genuine nuisance when there are nine of them in a fridge and you made all of them yesterday. Label them, or open them.

They also don't go in the microwave, so the reheat is a hob or an oven and a second dish. And for a set table, a serving bowl is a serving bowl — steel is the thing that got the food there, not necessarily the thing it goes on. That's a fair trade, but it's a trade.

What they're good for: the aftermath

Everyone's gone and there's too much food. This is the part where steel earns it. Uniform containers stack. They wash without a fight, because nothing bonds to them the way it does to scratched plastic. And they'll be doing this again next month, and in ten years — which is how long we guarantee the steel.

The seal is the part that wears out, so we sell it separately rather than pretend it doesn't.

Two materials, both named
